My grandmother and mother frequently made homemade chicken and dumplings. I vividly recall my Grandmother teaching me the process and assisting her in the kitchen when it was time to prepare the dumplings. Below is the recipe I follow. It's incredibly simple and easy to make. You can purchase a rotisserie chicken to make things easier, or you can cook any portion of chicken. I used to always cook a whole chicken in a pressure cooker for 20 minutes, let it cool, then remove all the meat from the bones to add to my dumplings. As my life became busier, I sometimes opted for the convenience of buying a rotisserie chicken and using chicken broth. Either way, they taste fantastic!
Ingredients
1 cup chicken broth or broth from cooked chicken
1 egg
3 cups flour
3-4 cups shredded/cut up chicken
Salt & Pepper to taste
Directions
-Cook the chicken and retain 1 cup chicken broth to use for the dumplings
-Once chicken has cooled debone and shred/cut up
-In a mixing bowl, mix 4 cups AP flour, 1 egg, 1 cup reserved broth, salt and pepper
-Mix with your hands and combine well
-On a floured surface work the dough and then roll out fairly thin (I split the dough in half and do this twice
-Using a knife slice long strips (if they are two long you can cut them in half as well)
-Drop the strips into boiling water/left over strained broth from the cooked chicken
-Boil for about 10-15 minutes (these get better the longer they cook-and are great as leftovers)
-Add the shredded/chopped chicken and warm through
